Description
These bakery-style apple crumb muffins are soft, loaded with cinnamon apples, and topped with a buttery streusel crumb.
Ingredients
Streusel: 3/4 cup flour, 1/3 cup brown sugar, 2 tbsp sugar, 1/2 tsp cinnamon, 6 tbsp butter
Muffins: 2 cups flour, 1/2 cup sugar, 1/2 cup brown sugar, 2 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp salt, 1/2 cup butter, 2 eggs, 1/2 cup milk, 1/4 cup oil, 1 tsp vanilla
Apple layer: 1 1/2 cups diced apples, 1/4 cup brown sugar, 1/2 tsp cinnamon
Instructions
1. Prepare streusel and chill.
2. Toss apples with sugar and cinnamon.
3. Mix dry ingredients and cut in butter.
4. Whisk wet ingredients separately.
5. Combine wet and dry ingredients gently.
6. Layer batter and apples into muffin liners.
7. Top generously with streusel.
8. Bake at high heat then reduce temperature.
Notes
Use Granny Smith apples for best balance.
Do not overmix batter.
High-heat start helps muffins rise tall.
