Description
A soft, buttery Apple & Cinnamon Loaf Cake made with fresh apples, warm cinnamon spice, and a moist vanilla sponge. Perfect for breakfast, tea time, or dessert.
Ingredients
100g softened butter
120g white sugar
2 medium eggs
180g plain flour
2 medium apples, peeled and chopped
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
2–3 tbsp milk
Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F) and grease a loaf tin.
2. Cream butter and sugar until light and fluffy.
3. Add eggs one at a time and mix well.
4. Stir in vanilla extract.
5. In another bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
6. Combine dry ingredients with wet mixture gradually.
7. Add milk if needed for soft batter consistency.
8. Fold in chopped apples gently.
9. Pour into loaf tin and smooth the top.
10. Bake for 45–50 minutes until golden and a toothpick comes out clean.
11. Let cool completely before slicing.
Notes
Best flavor after resting for a few hours.
Can be stored in an airtight container for 3–4 days.
Optional: add 50g chopped walnuts or a light cinnamon sugar topping before baking.
