Description

This Healthy Apple and Cinnamon Chia Cake is a wholesome, moist, and fiber-rich dessert infused with warm cinnamon, juicy apples, and chia seeds. Naturally gluten-free, it’s perfect for cozy breakfasts or nourishing snacks.


Ingredients

2 cups (180 g) old-fashioned rolled oats

2 tbsp (20 g) chia seeds

2 tsp (6 g) ground cinnamon

1 tsp (5 g) baking powder

½ tsp (2.5 g) baking soda

¼ tsp (1.5 g) salt

2 medium apples, peeled and diced

2 large eggs

½ cup (120 ml) unsweetened applesauce

¼ cup (60 ml) pure maple syrup

⅓ cup (80 ml) milk of choice (almond, oat, or dairy)

1 tsp vanilla extract

2 tbsp Greek yogurt (for topping)

1 tbsp maple syrup (for drizzle)

Thin apple slices and ground cinnamon for garnish


Instructions

1. Preheat the oven to 350°F (175°C) and line an 8-inch baking pan with parchment paper.

2. Blend oats in a food processor until a coarse flour forms.

3. In a large bowl, mix oat flour, chia seeds, cinnamon, baking powder, baking soda, and salt.

4. In another bowl, whisk eggs, applesauce, maple syrup, milk, and vanilla extract.

5. Combine wet and dry ingredients until just mixed, then fold in diced apples.

6. Pour the batter into the pan and smooth the top.

7. Bake for 35–40 minutes, or until a toothpick comes out clean.

8. Cool completely on a rack.

9. Whisk together Greek yogurt and maple syrup; drizzle over cooled cake.

10. Top with apple slices and a sprinkle of cinnamon before serving.

Notes

• For a vegan version, substitute eggs with flax eggs (1 tbsp flaxseed meal + 2.5 tbsp water each).

• Store leftovers in the fridge for up to 5 days or freeze for 2 months.

• Enjoy warm or chilled, with a cup of coffee or spiced chai!
