Description

Soft and chewy almond paste cookies with rich almond flavor, golden edges, and melt-in-your-mouth bakery-style texture. These bakery-style cookies are simple, elegant, and perfect with coffee or tea.


Ingredients

Scale

8 oz almond paste

1/2 cup granulated sugar

2 large egg whites

1 tsp almond extract

1/4 tsp salt

1/2 cup sliced almonds (optional)

Powdered sugar for dusting


Instructions

1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.

2. Break almond paste into small chunks and place into a mixing bowl.

3. Add sugar and mix until crumbly.

4. Add egg whites, almond extract, and salt.

5. Mix until a sticky dough forms.

6. If dough feels too sticky, chill for 15–20 minutes.

7. Scoop small portions and roll into balls.

8. Place cookies onto prepared baking sheet with space between them.

9. Press lightly and top with sliced almonds if desired.

10. Bake for 14–18 minutes until edges turn lightly golden.

11. Cool on baking sheet for 5 minutes before transferring to rack.

12. Dust with powdered sugar before serving.

Notes

Do not overbake or cookies may dry out.

Chilling the dough makes shaping easier.

Store in airtight container for up to 5 days.

Perfect served with espresso, coffee, or tea.
