Ingredients
1 cup all-purpose flour
1/2 cup almond flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup mascarpone cheese
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Whisk together all-purpose flour, almond flour, baking powder, and salt.
3. Cream butter and sugar until fluffy. Beat in mascarpone cheese until smooth.
4. Gradually add dry ingredients to wet, mixing gently until combined.
5. Scoop dough into tablespoon-sized balls, place on sheet, bake 12–14 minutes until golden.
6. Cool on baking sheet 5 minutes before transferring to rack. Dust with powdered sugar if desired.
Notes
Chill the dough if sticky. Add almond extract for stronger flavor. Store cookies airtight for up to 4 days or freeze for 2 months.
