Ingredients
3 ripe bananas
2 cups rolled oats
2 large eggs
1/2 cup chopped walnuts
Optional: 1 tsp cinnamon
Optional: 1/4 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.
2. Blend rolled oats in a blender until they resemble oat flour.
3. Mash bananas in a large bowl until smooth.
4. Whisk in eggs until fully combined.
5. Add blended oats and stir into thick batter.
6. Fold in chopped walnuts and optional add-ins if using.
7. Divide batter evenly into prepared muffin cups.
8. Bake for 18–20 minutes until tops are golden and muffins are set.
9. Cool muffins in pan for 5 minutes before transferring to a wire rack.
Notes
Use very ripe bananas for natural sweetness.
Do not overbake to keep muffins moist.
Store in an airtight container for up to 4 days.
Freeze well for easy meal prep.
