Description

Naturally gluten-free almond cookies made with just almond flour, sugar, egg whites, and almond extract, topped with sliced almonds and baked until lightly golden with a chewy center.

Ingredients

Scale

3 cups (about 300 g) fine blanched almond flour

1 1/2 cups (about 180 g) powdered sugar, or superfine sugar

2 large egg whites

1 teaspoon almond extract

Optional: about 1/2 cup (40 g) sliced almonds, for topping

Instructions

1. Preheat the oven to 325°F (165°C). Line two baking sheets with parchment paper.

2. In a large bowl, stir together the almond flour and powdered sugar.

3. Add the egg whites and almond extract and mix until a thick, sticky dough forms.

4. Scoop the dough into rounded tablespoon-sized portions and place them about 2 inches (5 cm) apart on the baking sheets. Wet your hands slightly if the dough sticks, and gently shape each portion into a ball.

5. Press sliced almonds onto the tops of the cookies, if using.

6. Bake for 12 to 15 minutes, until the tops are lightly golden and cracked and the edges are set.

7. Cool on the baking sheets for 10 minutes, since the cookies firm up as they cool, then transfer to a wire rack to cool completely.

Notes

Adapted from published almond flour cookie recipes found in search results (3 cups almond flour, 1 1/2 cups sugar, 2 egg whites, a 325°F oven, and a 12 to 15 minute bake come from one of them). The almond extract, the sliced almond topping, the yield of about 24 cookies, and the shaping and cooling details are estimates because the full method was not available to us, and the recipe has not been tested.

Use fine blanched almond flour, not coarse almond meal, for a smooth, light cookie.

The cookies are delicate and firm up as they cool, so let them rest on the pan before moving them.

Nutrition is an approximate estimate per cookie (about 24 cookies), including the sliced almonds.
