Ingredients
2 medium apples, peeled and chopped
2 cups rolled oats
2 large eggs
Optional Add-Ins:
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons chopped walnuts
1 tablespoon maple syrup
Instructions
1. Preheat oven to 350°F (175°C) and lightly grease a 12-cup muffin pan or line with paper liners.
2. Add chopped apples, rolled oats, and eggs to a blender or food processor.
3. Blend until mostly smooth while leaving a little texture from the oats.
4. Stir in cinnamon, vanilla, or walnuts if using.
5. Divide batter evenly among muffin cups.
6. Bake for 18 to 22 minutes or until muffins are set and lightly golden.
7. Allow muffins to cool in the pan for 5 minutes.
8. Transfer to a wire rack and cool completely before serving.
Notes
Sweet apples such as Honeycrisp, Gala, or Fuji work best.
For extra apple pie flavor add cinnamon and vanilla.
Store in an airtight container in the refrigerator for up to 5 days.
