Description

This 2-Minute Pumpkin Crumble is a quick single-serving dessert made with creamy pumpkin, warm spices, and a buttery oat crumble. Made in the microwave, it is cozy, easy, and perfect when a pumpkin craving hits


Ingredients

1/3 cup pumpkin purée
1 tablespoon brown sugar
1 teaspoon maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
2 tablespoons rolled oats
1 tablespoon all-purpose flour
1 tablespoon brown sugar
1 tablespoon cold butter
1 tablespoon chopped pecans or walnuts, optional
1 small pinch salt


Instructions

In a microwave-safe 6–8 ounce ramekin or small mug, combine the pumpkin purée, 1 tablespoon brown sugar, maple syrup, cinnamon, pumpkin pie spice, and vanilla extract. Stir until smooth.

In a small bowl, combine the rolled oats, flour, 1 tablespoon brown sugar, and salt.

Add the cold butter and work it into the dry ingredients with your fingertips or a fork until the mixture resembles coarse crumbs. Fold in the chopped pecans or walnuts if using.

Sprinkle the crumble mixture evenly over the pumpkin filling. Do not press the topping down.

Microwave on high for 60–90 seconds. Start with 60 seconds and add another 15–30 seconds if needed. The pumpkin filling should be hot and the topping should look cooked and slightly set.

Let the crumble rest for about 1 minute before serving.

Serve warm with whipped cream, Greek yogurt, vanilla ice cream, maple syrup, or toasted pecans if desired.

Use plain pumpkin purée rather than pumpkin pie filling.
A small 6–8 ounce microwave-safe ramekin works well for this single-serving dessert.
Microwave cooking times vary, so start with 60 seconds and add time gradually.
Do not overcook the crumble, as the topping can become dry.
