Description

A creamy no-bake pie with a two-ingredient filling of cream cheese and lemon curd, swirled with extra lemon curd and set in a buttery graham cracker crust.

Ingredients

For the crust: 1 1/2 cups (150 g) graham cracker crumbs (about 10 full sheets)

For the crust: 6 tablespoons (85 g) butter, melted

For the crust: 2 tablespoons granulated sugar

For the filling: 16 ounces (454 g) cream cheese, softened

For the filling: 1 cup (about 300 g) lemon curd, store-bought or homemade

For the swirl: 1/4 cup (about 75 g) lemon curd

Instructions

1. Stir the graham cracker crumbs, melted butter, and sugar together until the mixture looks like wet sand. Press it firmly and evenly into the bottom and up the sides of a 9-inch pie plate or springform pan.

2. Chill the crust in the refrigerator while you make the filling.

3. In a large bowl, beat the softened cream cheese until completely smooth and creamy, with no lumps.

4. Add 1 cup of the lemon curd and beat on low speed until smooth and well combined, scraping down the bowl once.

5. Spoon the filling into the chilled crust and spread it into an even layer.

6. Dollop the remaining 1/4 cup lemon curd over the top and drag a knife or toothpick through it to make a swirl pattern.

7. Refrigerate for at least 6 hours, or overnight, until the pie is firm enough to slice cleanly.

8. Slice with a sharp knife, wiping the blade between cuts, and serve chilled.

Notes

A 2-ingredient pie in the sense that the filling uses only two ingredients, cream cheese and lemon curd. Built from the common no-bake lemon cheesecake pie approach published by several recipe sites (for example, a graham cracker crust filled with a cream cheese and lemon curd mixture, with extra curd on top). No source gave exact ratios for a cream cheese and lemon curd only filling, so all of the amounts, the crust quantities, the chill time, and the yield of 8 slices are my own estimates. The recipe has not been tested, and the filling will be softer than a baked cheesecake.

Soften the cream cheese completely, or the filling will be lumpy.

Chill the pie overnight for the cleanest slices.

Nutrition is an approximate estimate per slice (8 slices).
