Description
These Zero Sugar Cottage Cheese Carrot Cake Bites are soft, spiced, healthy, and high in protein. Made with almond flour, carrots, warm spices, and cottage cheese, they are the perfect healthy snack, breakfast bite, or guilt-free dessert.
Ingredients
1 cup zero sugar cottage cheese
1 cup almond flour
1/2 cup grated carrots
1/4 cup zero sugar maple syrup
1 large egg
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp baking powder
1/4 tsp salt
1/4 cup chopped walnuts
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a mini muffin pan or baking tray with parchment paper.
2. In a mixing bowl, combine cottage cheese, egg, zero sugar maple syrup, and vanilla extract until smooth.
3. Add almond flour, cinnamon, nutmeg, baking powder, and salt and mix until combined.
4. Fold in grated carrots and chopped walnuts.
5. Scoop batter into mini muffin pan or form small bite-size portions on a baking tray.
6. Bake for 15–18 minutes until set and lightly golden.
7. Allow to cool for 10 minutes before serving.
Notes
Use finely grated carrots for the best texture.
Do not overbake to keep the bites soft and moist.
Store in the refrigerator for up to 5 days.
Freeze up to 2 months in an airtight container.
Great for meal prep snacks or healthy breakfast bites.
