Description
A gently baked vanilla rice milk dessert with a creamy texture that falls between pudding and cake. Simple, soothing, and comforting.
Ingredients
1 cup uncooked short-grain rice
3 cups whole milk
1/3 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
Instructions
1. Preheat oven to 350°F and grease an 8×8-inch baking dish.
2. Rinse rice under cold water until mostly clear.
3. Spread rice evenly in the baking dish.
4. Whisk milk, sugar, eggs, vanilla, and cinnamon until smooth.
5. Pour mixture over the rice.
6. Bake uncovered for 55–65 minutes, stirring once halfway through.
7. Remove when softly set and creamy.
8. Let rest 15 minutes before serving.
Notes
– Short-grain rice gives the creamiest texture.
– Do not overbake; center should jiggle slightly.
