  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon baking soda

  • ½ cup milk
  • ¾ cup raisins

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch cake pan, or line it with parchment paper.
  • (Optional) Soak the raisins in warm water for 10 minutes to keep them soft and juicy. Drain and pat dry.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  • Gently fold in the raisins, ensuring they are evenly distributed.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!

Notes

  • Soaking the raisins prevents them from drying out during baking.
  • For extra flavor, add a teaspoon of cinnamon or nutmeg.
