Description

This Vanilla Loaf Cake is soft, buttery, and incredibly moist with a rich vanilla flavor. Perfect for breakfast, tea time, or dessert, this easy loaf cake uses simple pantry ingredients and comes together quickly for a classic homemade treat everyone loves.


Ingredients

200g all-purpose flour

150g granulated sugar

120g butter (softened)

2 large eggs

120ml milk

1 tablespoon vanilla extract

1ยฝ teaspoons baking powder

ยผ teaspoon salt


Instructions

1. Preheat your oven to 180ยฐC (350ยฐF) and grease a loaf pan.

2. In a mixing bowl, cream the softened butter and sugar until light and fluffy.

3. Add the eggs one at a time, mixing well after each addition.

4. Stir in the vanilla extract.

5. In a separate bowl, whisk together flour, baking powder, and salt.

6. Gradually add the dry ingredients to the batter, alternating with milk.

7. Mix gently until just combined and smooth.

8. Pour the batter into the prepared loaf pan.

9. Bake for 45โ€“55 minutes or until a toothpick inserted in the center comes out clean.

10. Allow the cake to cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

Use room temperature butter, eggs, and milk for best texture.

Do not overmix the batter or the cake will be dense.

You can add lemon zest or chocolate chips for variation.

Store the cake in an airtight container for up to 3 days.
