Description

This Tropical Coconut Cake is soft, moist, and full of coconut flavor. Perfect for birthdays, holidays, and summer desserts.


Ingredients

2 ½ cups all-purpose flour

2 tsp baking powder

½ tsp salt

1 cup unsalted butter

2 cups granulated sugar

4 large eggs

1 cup coconut milk

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F and prepare cake pans.

2. Mix flour, baking powder, and salt.

3. Cream butter and sugar until fluffy.

4. Add eggs one at a time and mix well.

5. Add coconut milk and vanilla extract.

6. Combine wet and dry ingredients.

7. Pour batter into pans and bake 25–30 minutes.

8. Cool completely before frosting and serving.

Notes

Use full-fat coconut milk for best flavor.

Do not overmix the batter.
