- ¼ cup melted coconut oil
- ¼ cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups whole wheat flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan or line it with parchment paper.
- Mix wet ingredients: In a large mixing bowl, whisk together the mashed sweet potato, melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until smooth.
- Add dry ingredients: Sprinkle in the whole wheat flour, baking soda, baking powder, salt, and cinnamon. Gently fold everything together until just combined.
- Stir in oats: Fold in the rolled oats, being careful not to overmix the batter.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & enjoy: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

- Use fresh mashed sweet potato for the best texture and flavor. Roasted sweet potatoes work great!
