Description
Soft Strawberry Quick Bread packed with fresh strawberries and topped with sweet strawberry glaze.
Ingredients
3/4 cup granulated sugar
1/2 cup milk
1/2 cup canola oil or coconut oil
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fresh strawberries diced
For glaze
1 cup powdered sugar
2 tablespoons mashed strawberries
1–2 teaspoons milk
Instructions
1. Preheat oven to 350°F and prepare loaf pan
2. Whisk sugar milk oil egg and vanilla
3. Mix flour baking powder and salt in separate bowl
4. Combine dry and wet ingredients
5. Fold in diced strawberries
6. Pour batter into loaf pan
7. Bake 50-55 minutes until toothpick comes out clean
8. Mix glaze ingredients
9. Drizzle glaze over cooled bread
Notes
Toss strawberries in flour to prevent sinking
Allow bread to cool before glazing
Store in airtight container
