Soft Ricotta Almond Pillows are fluffy, tender cookies made with ricotta and almond flour. A cozy, melt-in-your-mouth treat perfect for any time.
Ingredients
1 cup ricotta cheese
1/2 cup almond flour
1/2 cup all-purpose flour
1/2 cup sugar
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
Powdered sugar for dusting
Instructions
1. Preheat oven to 350°F and line baking sheet.
2. Cream butter and sugar until fluffy.
3. Add ricotta, egg, and vanilla and mix.
4. Add dry ingredients and mix gently.
5. Scoop dough onto baking sheet.
6. Bake 12–15 minutes until lightly golden.
7. Cool and dust with powdered sugar.
Notes
Use full-fat ricotta for best texture.
Do not overbake.
Chill dough if sticky.
Dust with sugar before serving.
