Description
Soft and moist Greek Yogurt Banana Bread with cinnamon swirl made with oat flour and honey.
Ingredients
2 ripe bananas mashed
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
2 eggs
1 teaspoon vanilla extract
1 1/4 cups oat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons coconut sugar
1 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F and line loaf pan.
2. Mix bananas, yogurt, honey, eggs and vanilla.
3. Add oat flour, baking powder, baking soda and salt.
4. Mix cinnamon and sugar in small bowl.
5. Pour half batter into pan, sprinkle cinnamon sugar.
6. Add remaining batter and swirl.
7. Bake 40–45 minutes and cool before slicing.
Notes
Use ripe bananas.
Do not overmix batter.
Bread tastes better next day.
Can freeze slices.
