These banana cottage cheese scones are extra fluffy, lightly sweet, and naturally nourishing—perfect for breakfast or snacks.
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
2 tablespoons sugar or honey
½ teaspoon cinnamon
¼ cup cold unsalted butter
½ cup cottage cheese
1 ripe banana, mashed
1 large egg
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 400°F (200°C).
2. Mix flour, baking powder, baking soda, salt, sugar, and cinnamon.
3. Cut in cold butter until crumbly.
4. Mix cottage cheese, banana, egg, and vanilla.
5. Combine wet and dry ingredients gently.
6. Shape dough and cut into wedges.
7. Bake 15–18 minutes until fluffy and golden.
Notes
Use ripe banana for best flavor.
Do not overmix.
