Description
A soft and moist lemon loaf cake topped with a bright citrus glaze.
Ingredients
1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
1/2 cup milk
1/2 cup melted butter
2 eggs
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp vanilla extract
1 cup powdered sugar
2 tbsp lemon juice for glaze
Instructions
1. Preheat oven to 350°F
2. Mix flour baking powder and salt
3. In another bowl whisk sugar eggs milk butter lemon zest lemon juice and vanilla
4. Combine wet and dry ingredients
5. Pour batter into loaf pan
6. Bake 40 to 45 minutes
7. Mix glaze ingredients and drizzle over cooled cake
Notes
Use fresh lemons for best flavor
Do not overmix batter
Allow cake to cool before glazing
