Description
A classic raisin-only fruit cake with a soft buttery crumb, simple ingredients, and tender raisins in every bite.
Ingredients
220 g all-purpose flour
1 tsp baking powder
1/4 tsp salt
170 g unsalted butter, softened
180 g granulated sugar
3 large eggs, room temperature
1 tsp vanilla extract
180 g raisins
2 tbsp milk (as needed)
Instructions
1. Preheat oven to 350°F and line pan.
2. Whisk dry ingredients together.
3. Cream butter and sugar until fluffy.
4. Add eggs one at a time, then vanilla.
5. Fold in dry ingredients gently.
6. Stir in raisins evenly.
7. Bake 40–50 minutes until golden.
8. Cool completely before slicing.
Notes
Soak raisins for extra moisture.
Do not overmix batter.
Cool fully for clean slices.
