Description
Moist and protein packed cottage cheese banana bread made with honey and ripe bananas. A wholesome family favorite!
Ingredients
1 cup cottage cheese
2 ripe bananas mashed
2 large eggs
1/3 cup honey
1 tsp vanilla
1/4 cup melted coconut oil
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Instructions
1. Preheat oven to 350°F.
2. Mix wet ingredients.
3. Whisk dry ingredients.
4. Combine wet and dry.
5. Pour into loaf pan.
6. Bake 50–60 minutes.
7. Cool before slicing.
Notes
Use very ripe bananas.
Blend cottage cheese for smoother texture.
Store in fridge up to 5 days.
