Description

Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup mascarpone cheese

1/2 cup shelled pistachios, chopped


Instructions

1. Preheat oven to 350°F (175°C). Grease and line an 8×4-inch loaf pan.

2. Whisk together flour, baking powder, baking soda, and salt.

3. Cream butter and sugar until light and fluffy.

4. Beat in eggs one at a time, then add vanilla.

5. Mix in mascarpone until smooth.

6. Fold in dry ingredients gently.

7. Stir in pistachios, reserving some for topping.

8. Pour into loaf pan, sprinkle with extra pistachios, and bake 45–55 minutes.

9. Cool 10 minutes in pan, then transfer to wire rack. Slice and enjoy.
