Scale

1 ½ cups dates, pitted and chopped

1 cup boiling water

1 teaspoon baking soda

2 cups all-purpose flour

1 teaspoon ground cinnamon

½ teaspoon ground cardamom

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup milk

Notes

For richer flavor, add chopped walnuts or pistachios.

This cake pairs beautifully with mint tea or a drizzle of honey.
