Description

Moist, nutty, and naturally sweet, these Healthy Pecan Greek Yogurt Banana Bread Muffins are perfect for breakfast or snacks.


Ingredients

Scale

2 ripe bananas (mashed)

½ cup Greek yogurt

1 egg

¼ cup honey or maple syrup

¾ cup oat flour

½ teaspoon baking powder

½ teaspoon cinnamon

¼ cup chopped pecans


Instructions

1. Preheat oven to 350°F (175°C). Grease or line muffin tin.

2. Mash bananas in a mixing bowl.

3. Add Greek yogurt, egg, and honey/maple syrup; mix well.

4. In another bowl, combine oat flour, baking powder, and cinnamon.

5. Gently fold dry ingredients into wet mixture.

6. Fold in chopped pecans.

7. Scoop batter into muffin cups, ¾ full.

8. Bake for 18–22 minutes, until toothpick comes out clean.

Notes

Use overripe bananas for best flavor.

Toast pecans before adding for extra nuttiness.
