Description
High protein peanut butter chocolate fudge cookies made with Greek yogurt, oat flour, and chocolate protein powder. Soft, fudgy, and naturally sweetened.
Ingredients
½ cup peanut butter
⅓ cup Greek yogurt
¼ cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
¾ cup oat flour
1 scoop chocolate protein powder
2 tablespoons cocoa powder
½ teaspoon baking powder
Pinch of salt
¼ cup dark chocolate chips
Instructions
1. Preheat oven to 350°F and line baking sheet.
2. Mix peanut butter, yogurt, honey, egg, and vanilla until smooth.
3. Stir in oat flour, protein powder, cocoa powder, baking powder, and salt.
4. Fold in chocolate chips.
5. Scoop dough and slightly flatten.
6. Bake 9–11 minutes until soft and set.
7. Cool briefly before serving.
Notes
Do not overbake for fudgy texture.
Use natural peanut butter.
Chill dough if needed for shaping.
