Ingredients
1 cup oat flour
½ teaspoon baking powder
¼ teaspoon baking soda
½ cup Greek yogurt
½ cup peanut butter
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
½ cup chocolate chips
Instructions
1. Preheat oven to 350°F and line a muffin tin.
2. Mix oat flour, baking powder, and baking soda.
3. Whisk Greek yogurt, peanut butter, honey, egg, and vanilla.
4. Combine wet and dry ingredients gently.
5. Fold in chocolate chips.
6. Fill muffin tin and bake 16–20 minutes.
Notes
For best results, use creamy peanut butter.
