These Healthy Peanut Butter Greek Yogurt Chocolate Chip Blondie Bars are chewy, naturally sweetened, and protein-packed. Perfect as a guilt-free snack or dessert.
Ingredients
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment.
2. Whisk peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.
3. Stir in oat flour, baking powder, and cinnamon.
4. Fold in chocolate chips.
5. Spread in pan and bake 18–22 minutes until golden.
6. Cool before slicing into bars.
Notes
For extra gooey blondies, slightly underbake.
Store in fridge up to 1 week or freeze up to 2 months.
