Description
Gooey, chocolatey, healthy banana bread cookie muffin cups made with Greek yogurt, peanut butter, and oat flour.
Ingredients
1 mashed banana
1/2 cup Greek yogurt
1/3 cup peanut butter
1/4 cup honey
1 egg
1 teaspoon vanilla
1 1/4 cups oat flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/3 cup chocolate chips
Instructions
1. Preheat oven to 350°F and line muffin pan.
2. Mix banana, yogurt, peanut butter, honey, egg, vanilla.
3. Add oat flour, baking powder, cinnamon, salt.
4. Fold in chocolate chips.
5. Divide into muffin cups.
6. Bake 18–22 minutes.
Notes
Top with extra chocolate chips for melty centers.
