Description

These Healthy Peanut Butter Greek Yogurt Banana Apple Muffins are moist, wholesome, and filled with gooey chocolate centers. Perfect for breakfast or a snack!


Ingredients

Scale

2 ripe bananas (mashed)

1 apple (peeled & grated)

1/2 cup peanut butter

1/3 cup Greek yogurt

1/4 cup honey or maple syrup

1 egg

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 cup oat flour

1/2 teaspoon baking powder

1/4 cup chocolate chunks


Instructions

1. Preheat oven to 350°F (175°C) and line muffin tin.

2. Mash bananas and mix with grated apple, peanut butter, yogurt, honey, egg, vanilla, and cinnamon.

3. Stir in oat flour and baking powder until combined.

4. Fill muffin cups halfway, add chocolate chunks, then cover with more batter.

5. Bake 18–22 minutes until golden. Cool before serving.

Notes

Store at room temp 3 days, fridge 6 days, or freeze 2 months. Use very ripe bananas for best sweetness.
