Description

Flourless 4-ingredient peanut butter date cookies naturally sweetened with dates. No eggs, no added sugar, and gluten-free.


Ingredients

Scale

1 cup pitted Medjool dates

1/2 cup natural peanut butter

1/2 tsp vanilla extract

1/4 tsp baking soda


Instructions

1. Preheat oven to 350°F and line a baking sheet.

2. Blend all ingredients in a food processor until smooth.

3. Roll dough into balls and flatten slightly.

4. Bake 10–12 minutes until set.

5. Cool on pan before serving.

Notes

Use soft Medjool dates for best texture.

Do not overbake for soft cookies.

Store cookies refrigerated for freshness.
