Description

These no-bake Peanut Butter Chocolate Clusters are the ultimate healthy treat! Creamy peanut butter and banana centers coated in silky dark chocolate — gluten-free, refined sugar-free, and made with just 5 simple ingredients. Perfectly sweet, slightly salty, and incredibly satisfying for any time of day.


Ingredients

2 ripe bananas (spotty and soft for best sweetness)

1/2 cup natural creamy peanut butter

1 teaspoon vanilla extract

1 1/2 cups dark chocolate chips (use dairy-free if needed)

1 tablespoon coconut oil

Pinch of sea salt (optional)


Instructions

1. Mash the ripe bananas in a medium bowl until smooth and creamy.

2. Add the peanut butter and vanilla extract, stirring until the mixture is well combined.

3. Line a baking sheet with parchment paper. Using a spoon or small scoop, form tablespoon-sized mounds of the peanut butter-banana mixture.

4. Freeze the clusters for 30 minutes or until firm.

5. Meanwhile, melt the dark chocolate chips and coconut oil together in 30-second intervals in the microwave, stirring until smooth.

6. Dip each frozen cluster into the melted chocolate using a fork, letting excess drip off.

7. Place dipped clusters back on the parchment paper and sprinkle with sea salt (optional).

8. Refrigerate for 15–20 minutes or until the chocolate is fully set.

Notes

• Store clusters in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.

• Use extra-ripe bananas for the best natural sweetness and smooth texture.
