These Healthy Peanut Butter Banana Oat Muffins are soft, nutty, and naturally sweet—perfect for breakfast, snacks, or a wholesome treat.
Ingredients
2 ripe bananas, mashed
½ cup peanut butter
¼ cup honey or maple syrup
2 large eggs
1 teaspoon vanilla extract
½ teaspoon cinnamon
1 teaspoon baking soda
1 ½ cups oat flour (or blended rolled oats)
½ cup milk (dairy or non-dairy)
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
2. Mash bananas in a bowl. Add peanut butter, honey, eggs, vanilla, and milk. Whisk smooth.
3. Mix oat flour, cinnamon, and baking soda in a separate bowl.
4. Combine wet and dry ingredients until just mixed.
5. Scoop batter into muffin cups, filling ¾ full.
6. Bake 18–22 minutes until a toothpick comes out clean.
7. Cool on a wire rack and enjoy!
Notes
Use ripe bananas for best sweetness.
Substitute almond butter or sunflower butter if desired.
Add chocolate chips, nuts, or blueberries for extra flavor.
These muffins freeze well for up to 2 months.
