Description
This Old-Fashioned Raisin Cake is inspired by Depression-era baking. Made without eggs, milk, or butter, it uses simple pantry staples to create a moist, warmly spiced, and comforting dessert.
Ingredients
1 cup granulated sugar
1 cup water
½ cup vegetable oil
¼ cup molasses
1 cup raisins
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon baking powder
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×8 baking pan.
2. In a saucepan, combine sugar, water, oil, molasses, raisins, cinnamon, nutmeg, and salt.
3. Bring to a gentle boil and simmer for 5 minutes.
4. Remove from heat and allow mixture to cool for 10-15 minutes.
5. Stir in baking soda and baking powder.
6. Gradually mix in flour until fully combined.
7. Pour batter into prepared pan.
8. Bake for 30-35 minutes until a toothpick comes out clean.
9. Cool completely before slicing and serving.
Notes
Simmering the raisins enhances flavor and texture.
Allow mixture to cool before adding flour.
Cake tastes even better the next day.
Store covered at room temperature up to 4 days.
