Description
Moist and nostalgic Old-Fashioned Date & Nut Tea Cake filled with sweet dates and crunchy walnuts or pecans.
Ingredients
1 cup chopped dates
1 cup chopped walnuts or pecans
1 cup boiling water
1 teaspoon baking soda
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Instructions
1. Pour boiling water over dates and stir in baking soda. Let sit 10โ15 minutes.
2. Cream butter and sugar until fluffy.
3. Add eggs one at a time, then vanilla.
4. Whisk flour, baking powder, and salt.
5. Alternate adding dry ingredients and date mixture to batter.
6. Fold in nuts.
7. Pour into greased loaf pan.
8. Bake at 350ยฐF for 50โ60 minutes.
9. Cool before slicing.
