Ingredients

For the Filling:

4 cups fresh or frozen pitted cherries

1/2 cup granulated sugar

1 tbsp lemon juice

2 tbsp cornstarch

1/2 tsp vanilla extract
For the Cobbler Topping:

1 cup all-purpose flour

1/2 cup sugar

1 1/2 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter (cold, cubed)

1/2 cup milk

1/2 tsp almond extract (optional)

Instructions

Preheat oven to 375°F (190°C).

In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Cook over medium heat until thickened. Remove from heat and stir in vanilla extract. Pour into a greased 9×9-inch baking dish.

In a bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in milk and almond extract until just combined.

Drop spoonfuls of the topping over the cherry filling, spreading gently to cover most of the surface.

Bake for 35–40 minutes, or until the topping is golden and the filling is bubbling around the edges.

Let it cool for at least 15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream!
