Ingredients

  • For the Filling:

    • 4 cups fresh or frozen pitted cherries

    • 1/2 cup granulated sugar

    • 1 tbsp lemon juice

    • 2 tbsp cornstarch

    • 1/2 tsp vanilla extract

    For the Cobbler Topping:

    • 1 cup all-purpose flour

    • 1/2 cup sugar

    • 1 1/2 tsp baking powder

    • 1/2 tsp salt

    • 1/2 cup unsalted butter (cold, cubed)

    • 1/2 cup milk

    • 1/2 tsp almond extract (optional)


Instructions

  • Preheat oven to 375°F (190°C).

  • In a saucepan, combine cherries, sugar, lemon juice, and cornstarch. Cook over medium heat until thickened. Remove from heat and stir in vanilla extract. Pour into a greased 9×9-inch baking dish.

  • In a bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in milk and almond extract until just combined.

  • Drop spoonfuls of the topping over the cherry filling, spreading gently to cover most of the surface.

  • Bake for 35–40 minutes, or until the topping is golden and the filling is bubbling around the edges.

  • Let it cool for at least 15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream!

Notes

  • Use cold butter to ensure a flaky, tender topping — that’s Nonna’s secret!

  • You can prepare the filling a day ahead and refrigerate it until you’re ready to bake.
