Description
Healthy oatmeal carrot and apple cake made with oat flour, yogurt and naturally sweet fruit. Moist, wholesome and perfect for breakfast or snack.
Ingredients
1 cup oat flour
1 tsp baking powder
1/2 tsp cinnamon
2 eggs
1 cup natural yogurt
2 tbsp honey or maple syrup
2 carrots grated
2 apples grated
Handful chopped walnuts
Instructions
1. Preheat oven to 350°F.
2. Mix oat flour baking powder and cinnamon.
3. Whisk eggs yogurt and honey.
4. Add grated apples and carrots.
5. Combine wet and dry mixtures.
6. Pour batter into prepared cake pan.
7. Sprinkle walnuts on top.
8. Bake 35-40 minutes.
9. Cool before slicing.
Notes
Use fresh grated apples for moisture.
Do not overmix the batter.
Store cake in refrigerator up to 5 days.
