  • 1 cup (100g) oatmeal or oat flour
  • 2 medium apples, peeled and grated
  • 3.5 oz (100g) raisins
  • 1 medium carrot, grated
  • 1 egg (or flax egg for a vegan option)
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • A pinch of salt
  • Optional: A handful of chopped nuts or seeds

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper
  • Grate the apples and carrot. If the apples are very juicy, gently squeeze out excess moisture
  • In a mixing bowl, combine the oatmeal, grated apple, grated carrot, and raisins
  • Add the egg (or flax egg), cinnamon, baking powder, and salt. Stir well until evenly mixed
  • Scoop small portions of the mixture and shape into cookie-sized rounds
  • Place them onto the prepared baking sheet, leaving a little space between each
  • Bake for 15–18 minutes, or until the cookies are slightly golden and firm to the touch
  • Let them cool on the baking sheet for a few minutes before transferring to a wire rack

Notes

  • For a crunchier texture, bake for an extra 2–3 minutes
  • If you prefer extra sweetness, add 1–2 tablespoons of honey or maple syrup
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week
