- 1 cup (100g) oatmeal or oat flour
- 2 medium apples, peeled and grated
- 3.5 oz (100g) raisins
- 1 medium carrot, grated
- 1 egg (or flax egg for a vegan option)
- ½ teaspoon cinnamon
- ½ teaspoon baking powder
- A pinch of salt
- Optional: A handful of chopped nuts or seeds
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper
- Grate the apples and carrot. If the apples are very juicy, gently squeeze out excess moisture
- In a mixing bowl, combine the oatmeal, grated apple, grated carrot, and raisins
- Add the egg (or flax egg), cinnamon, baking powder, and salt. Stir well until evenly mixed
- Scoop small portions of the mixture and shape into cookie-sized rounds
- Place them onto the prepared baking sheet, leaving a little space between each
- Bake for 15–18 minutes, or until the cookies are slightly golden and firm to the touch
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack
Notes
- For a crunchier texture, bake for an extra 2–3 minutes
- If you prefer extra sweetness, add 1–2 tablespoons of honey or maple syrup
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week
- These cookies freeze well! Store in a freezer-safe container for up to 3 months
