Description
Healthy no sugar carrot cake bars made with cottage cheese, oats, and naturally sweet carrots.
Ingredients
1 ½ cups grated carrots
1 cup cottage cheese
2 large eggs
½ cup rolled oats
½ cup oat flour
¼ cup raisins
¼ cup chopped walnuts
1 tsp cinnamon
¼ tsp nutmeg
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F and line an 8×8 pan.
2. Blend cottage cheese, eggs, vanilla, and oats.
3. Mix dry ingredients in a bowl.
4. Combine wet and dry ingredients.
5. Fold in carrots, raisins, and nuts.
6. Bake 30–35 minutes until set.
7. Cool completely before frosting.
Notes
Blend cottage cheese until smooth.
Let bars chill before slicing.
