These no-bake toasted coconut macaroons are chewy, sweet, and perfectly coconutty. Made with just three simple ingredients and no oven required, they’re ideal for quick desserts, holiday treats, or last-minute sweet cravings.
Ingredients
2 1/2 cups shredded coconut
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
Instructions
1. Add shredded coconut to a dry skillet over medium heat.
2. Toast the coconut, stirring constantly, until golden and fragrant.
3. Remove from heat and allow coconut to cool slightly.
4. Transfer toasted coconut to a mixing bowl.
5. Stir in sweetened condensed milk and vanilla extract until fully combined.
6. Scoop and shape the mixture into small mounds.
7. Place macaroons on a plate or baking sheet.
8. Allow to set at room temperature or chill for 15–20 minutes before serving.
Notes
Stir coconut constantly while toasting to prevent burning.
Chill macaroons for firmer texture.
Optional: drizzle with melted chocolate once set.
