Description
This ultra-moist date and walnut cake is naturally sweet, rich, and perfectly tender with a classic homemade flavor.
Ingredients
1 cup chopped dates
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter
3/4 cup brown sugar
2 large eggs
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
1/2 cup chopped walnuts
Instructions
1. Soak dates in boiling water with baking soda for 10 minutes.
2. Preheat oven to 350°F and prepare pan.
3. Cream butter and brown sugar.
4. Beat in eggs and vanilla.
5. Mix flour, baking powder, and salt.
6. Combine wet and dry ingredients.
7. Stir in date mixture and walnuts.
8. Bake 35–45 minutes until set.
9. Cool before slicing.
Notes
Use soft dates for best texture.
Do not overmix once flour is added.
