Ingredients
3 ripe bananas, mashed
2 large eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
3/4 cup granulated sugar
1/4 tsp ground nutmeg
1/2 tsp salt
1 tsp vanilla extract
1/2 cup walnuts or pecans, chopped
1/2 cup unsalted butter, melted
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin.
2. Mash bananas and whisk with eggs, melted butter, vanilla, and sugar.
3. Add flour, baking soda, cinnamon, nutmeg, and salt then fold until just combined.
4. Stir in chopped nuts.
5. Fill muffin cups about 3/4 full.
6. Bake for 18-22 minutes until golden and a toothpick comes out clean.
Notes
Use very ripe bananas for maximum sweetness.
Toast the nuts before adding for extra flavor.
Avoid overmixing the batter to keep muffins tender.
