Description
Classic mini French almond cakes (financiers) made with browned butter, almond meal, and egg whites—rich, tender, and elegant.
Ingredients
150 g unsalted butter
25 g all-purpose flour
125 g almond meal
100 g powdered sugar
1 pinch salt
4 large egg whites
½ tsp vanilla extract
Instructions
1. Brown butter until golden and nutty.
2. Whisk almond meal, sugar, flour, and salt.
3. Lightly whisk egg whites and add to mixture.
4. Stir in vanilla and browned butter.
5. Rest batter 20 minutes.
6. Fill molds and top with almonds.
7. Bake at 375°F for 12–15 minutes.
8. Cool and serve.
Notes
Resting batter improves texture.
Brown butter carefully.
Mini muffin pans work well.
