Description
Sweet, golden, and cozy Maple Honey Cornbread Muffins made with cornmeal, honey, and maple syrup. Perfect for breakfast, snacking, or alongside dinner.
Ingredients
1 cup cornmeal
1 cup all-purpose flour (or whole wheat flour)
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1/2 cup honey
1/4 cup maple syrup
1 cup milk
1/3 cup melted butter
1 tsp vanilla extract
Instructions
1. Preheat oven to 375°F (190°C). Line or grease muffin tin.
2. Whisk dry ingredients in one bowl.
3. Whisk wet ingredients in another bowl.
4. Combine wet and dry; stir gently.
5. Fill muffin tin 3/4 full.
6. Bake 15–18 minutes until golden.
7. Cool and serve warm.
Notes
For a savory twist, add cheddar and jalapeños. Store muffins in an airtight container up to 3 days at room temperature or freeze up to 2 months.
