Description

A light and moist low-fat fruit cake made with warm spices and naturally sweet fruit. Perfect for tea time or everyday dessert.


Ingredients

Scale

2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/4 cup vegetable oil or melted light butter

3/4 cup brown sugar

2 large eggs

3/4 cup low-fat milk or buttermilk

1 tsp vanilla extract

1 cup mixed dried fruit

1/2 cup chopped apple or pineapple

2 tbsp flour (for coating fruit)


Instructions

1. Preheat oven to 350°F (175°C) and prepare pan.

2. Whisk dry ingredients together.

3. Whisk wet ingredients until smooth.

4. Combine wet and dry gently.

5. Toss fruit with flour and fold into batter.

6. Pour into pan and bake 40–45 minutes.

7. Cool before slicing.

Notes

Do not overmix.

Use juicy fruit for best moisture.
