Low carb cranberry pistachio cookies that are soft, sugar-free, and keto-friendly.
Ingredients
1 cup almond flour
1/3 cup sweetener
1 egg
1/2 teaspoon vanilla
1/4 teaspoon baking powder
pinch salt
1/3 cup pistachios
1/4 cup sugar-free cranberries
Instructions
1. Preheat oven to 350°F.
2. Mix egg, sweetener, and vanilla.
3. Add almond flour and dry ingredients.
4. Fold in pistachios and cranberries.
5. Shape cookies.
6. Bake 10–12 minutes.
7. Cool completely.
Notes
Use fine almond flour.
Let cookies cool fully.
Do not overbake.
Use sugar-free cranberries.
