Ingredients
1 cup ricotta cheese
1/2 cup butter
1 cup sugar
3 eggs
1 teaspoon vanilla extract
Zest of 2 lemons
1/4 cup lemon juice
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Powdered sugar
Instructions
1. Preheat oven to 350°F.
2. Cream butter and sugar.
3. Add ricotta, eggs, vanilla, lemon zest, and juice.
4. Mix in dry ingredients.
5. Pour into pan.
6. Bake 30–35 minutes.
7. Cool and dust with sugar.
Notes
Use fresh lemon.
Do not overmix.
Cool before slicing.
