Description

Healthy Lemon Poppy Seed Cottage Cheese Scones with bright citrus flavor and 8.9g protein each.


Ingredients

Scale

1 cup cottage cheese

1 3/4 cups all-purpose flour

1/4 cup sugar

1 tbsp poppy seeds

1 tbsp lemon zest

2 tbsp lemon juice

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 egg

3 tbsp cold butter

1 tsp vanilla extract


Instructions

1. Preheat oven to 375°F and line baking sheet

2. Mix flour sugar poppy seeds baking powder baking soda and salt

3. Cut cold butter into flour mixture

4. Mix cottage cheese egg vanilla lemon zest and lemon juice

5. Combine wet and dry ingredients to form dough

6. Shape into circle and cut into 8 wedges

7. Bake 16-18 minutes until golden

Notes

Use cold butter for flaky texture

Do not overmix dough

Add lemon glaze for extra brightness
