Soft and fluffy lemon muffins bursting with fresh citrus flavor and topped with a sweet glaze.
Ingredients
Scale
Zest of 2 lemons
3/4 cup sugar
1/2 cup butter
2 eggs
1/2 cup milk
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F.
2. Rub lemon zest with sugar.
3. Add wet ingredients and mix.
4. Add dry ingredients.
5. Fill muffin cups.
6. Bake 18–22 minutes.
7. Cool and glaze.
Notes
Do not overmix.
Use fresh lemon juice.
Optional glaze adds extra flavor.
